He makes a case for an important Francophone and Mennonite presence in this agricultural sector during the period 1880-1960. The book includes chapters on early cheese making in Manitoba, Manitoba Dairy Administration, cheese factories in the Franco-Manitoba and Mennonite communities and the role of women in the cheese factories. One chapter contains the biographies of E. Cora HInd, Jakob T. Regehr, Jacob S. Friesen, Peter W. Friesen, Isidore Villeneuve, Archibald Wright and William Hollingworth — all who played a significant role in the story of cheese making in Manitoba.
